WHAT’S IT ABOUT:

The Beef Roundup celebrates all things beef! It began with eight Wyoming ranches in competition for the “Best Beef in Wyoming”, and to bring awareness to Wyoming ranches providing direct-to-consumer beef sales. Media articles and social media posts got the attention of several producers from other states that contacted us to enter their beef for judging. To include them, we developed the open division for producers from outside of Wyoming to compete for the “Best Beef in the West”. After a few years we now host over 30 producers from across the country. This year we anticipate over 50, and look to recruit at least one beef producer from every state. 

HOW DOES IT WORK:

For the “Best Beef in the West” division we have producers send in Ribeye steaks, New York Strip steaks, Sirloin steaks and ground beef. In the first round we have a chef prepare one of each competitor’s New York Strip steaks exactly the same. The steaks get salt, pepper and fire. That’s it! Each steak is served separately to our panel of 6-to-10 celebrity judges. Each judge scores each steak in several key areas. The top four selected ranches enter the second round with their Ribeye steaks. The second round determines the overall winner. The top four are awarded with a “beef score” and place in the event. 

For the “Best Beef in Wyoming” division we have 10 ranches from across the state put in 8-to-9 pounds of New York Strip steaks. Each set of steaks is prepared during the ticketed VIP dinner that evening. Sponsor and VIP ticket holders will be seated with the beef producers from each ranch – only 125 total seats are available. All attendees will receive a single vote  to determine the winner. 

 

 

WHAT ELSE IS GOING ON:

During the day we have several events for the public about everything from beef preparation to beef production and sustainability. We have ticketed beef and wine pairing and beef and beer pairing classes. There will also be a ticketed Q & A with several leading carnivore diet experts. As well as a free concert featuring local musicians in the park adjacent to the venue. The Beef Roundup is an all-day celebration of American beef and ranches!

WHAT IS THE OBJECTIVE:

The Beef Roundup does more than feed attendees great steak! It showcases beef producers as well as craft butchery and beef preparation. The Roundup raises money for Central Wyoming College’s Meat Science Program scholarships, as well as other agricultural studies. There is a shortage of skilled trades laborers like butchers, farmers and ranchers. The cost of educational opportunities are all limiting factors to any career, and the Beef Roundup supports those who want to raise beef for our communities. To do this, the Roundup partners with Central Wyoming College to provide relevant resources for those aspiring to farm and ranch careers. 

Central Wyoming College is a 4-year community college with a main campus in Riverton, Wyoming. Its Rustler Ag and Equine Center hosts a USDA-inspected Meats Lab that is capable of processing small and large livestock, including bison. The College’s 127-acre Alpine Science Institute near Lander, Wyoming hosts the Regenerative Small-scale Farming program and its ½-acre diversified vegetable student farm. The place-based Culinary and Hospitality program is headquartered in Jackson, Wyoming at the College’s Jackson Outreach Campus. To connect people to our food and landscape, the College leads a local food and ag economy initiative, Grow Your Own: Foods, Jobs and Community, that develops food system infrastructure and sales channels for food entrepreneurs – our farmers, ranchers and food artisans. Additionally, the College’s Bootstrap Collaborative provides these small business owners with support services. 

The Beef Roundup is a fun, educational celebration of ranching and eating beef. It connects our us who want to raise good beef with those that want to eat good beef for us enjoy creating community together.
